Ivan Chai, également connu sous le nom d'épilobe en épi, est une tisane sans caféine, cueillie et transformée à la main au jardin de thé de Kinnettles. Cette infusion traditionnelle russe remonte au XIIIe siècle. Elle se présente comme un thé semi-oxydé à la couleur profonde et possède un goût doux, rappelant la courgette, avec une note d'agrumes. Seuls 5 kg sont récoltés chaque année.
